Chocolate Crinkles

A classic–Chocolate Crinkles (Nick Malgieri’s version). Very good and easy to make–no mixer required!

Ingredients

1 stick unsalted butter (cut into 8 pieces)
4 ounces unsweetened chocolate (cut into 1/4″ pieces)
2 cups flour
2 tsp baking powder
1/4 tsp salt
4 large eggs
2 cups sugar
1 tsp vanilla
Confectioner’s sugar for coating cookies

Directions

Melt butter in small saucepan over medium heat until bubbles slightly. Remove from heat and add chocolate. Stir until melted.

In bowl combine flour, baking powder and salt. Stir well to mix.

In large bowl whisk the eggs until broken up. Whisk in the sugar; then add vanilla. Whisk in chocolate mixture then fold in flour mixture with rubber spatula.

Cover bowl with plastic wrap and refrigerate dough at least 4 hours or overnight (which is better).

Preheat oven to 350 degrees. Line cookie sheet with parchment.

Place confectioner’s sugar in bowl. Remove dough from refrigerator and use small scoop to form balls. Drop balls in sugar and coat well.

Place balls on sheets about 2″ apart and bake 12-15 minutes until the tops are cracked and cookies firm. Be sure to keep remaining dough in refrigerator until ready to bake.

Makes about 70.
