This is an Alton Brown recipe. It’s super easy and the fudge melts in your mouth…a keeper!
8 ounces unsalted butter
1 cup creamy peanut butter
1 tsp vanilla
1 pound powdered sugar
Line a 8″x8″ pan with foil or parchment and butter.
Combine butter and peanut butter in large microwave-safe bowl and cover with plastic wrap. Microwave for 2 minutes on high. Stir and microwave again for 2 minutes. Remove from microwave and stir in vanilla and powdered sugar. Spread into pan and cover top with parchment paper. Refrigerate until cool, about 2 hours. Cut into 1″ pieces and store at room temperature for up to a week.
