At the request of Nicholas, I made Toffee Cookies. They are a sweet, thin, chewy cookie with toffee bits. Very easy to make and tasty. I like that they satisfy the sweet tooth without weighing you down!
Ingredients
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
8 oz. package toffee bits
Directions
Heat oven to 350 degrees. Lightly grease cookie sheet.
Stir together flour, baking soda and salt; set aside. Beat butter, both sugars and vanilla until well blended. Add eggs; beat well. Gradually, add flour mixture, beating until well blended. Stir in toffee bits.
Drop by rounded teaspoons on prepared cookie sheet. Bake 9-11 minutes or until lightly browner. Cool slightly then remove to wire rack to cool completely.
Makes about 4 dozen.
